Dining at the Fairmont Chateau Whistler

DINING

The Wildflower
The Wildflower has been the epicentre of Chateau Whistler's culinary reputation since the opening of Chateau Whistler Resort in 1989. In 1997, the Chateau welcomed the arrival of Executive Chef Glenn Monk, who returned to British Columbia after spending eight years in the Asia Pacific region working with Pan Pacific hotels. Glenn has incorporated his flair for international tastes at the Chateau Whistler by combining a blend of unique flavours from the Pacific Northwest with fresh, local and organic products.

In addition to the Wildflower menu, weekly table d'hôte signature dishes are created by The Wildflower's newest star, Sous Chef Richard Ullman. Richard has been with the Chateau Whistler since June 1991 and has held positions in each of the hotel's kitchens as Chef de Partie, developing himself as a capable and respected member of the culinary team.

The Wildflower breakfast buffet features Whistler's largest and most innovative selection of delicious and healthy breakfast foods, 7:00 - 11:00 am daily.

Weekends feature the Flavours of the Pacific Northwest dinner buffet highlighting the finest of the Pacific Northwest cuisine combined with traditional Canadian fare, unique presentation and superb value.

The Chateau's renowned Sunday brunch remains the benchmark of Whistler brunch buffets served from 10:00 - 2:00 pm and dinner guests are welcomed in the Wildflower from 5:00 pm to 10:00 pm daily.

Portobello
In December 1997, the hotel introduced the exciting and interactive Portobello, an open- kitchen delicatessen, speciality food boutique and bar in the lower lobby area. The restaurant features a "passport" ordering system and unique market-style menu with mouth-watering temptations from the deli and fresh produce chosen and prepared on the spot.

The seafood station, pasta, pizza, salad and grill stations contribute to a lively atmosphere appealing to audiences and food lovers of all ages.

Mallard Lounge
At the end of the day, there is no better place to unwind than fireside in the Mallard Lounge with its spectacular view of Blackcomb Mountain. This estate library-style lounge is often referred to as the "Gem of the Chateau", following the time-honoured tradition of the grand hotel lounges. After the completion of a $2 million expansion in December 1999, the Mallard Lounge now offers a new bar, 52 new seats and an expansive heated patio with two gas fire pits. Floor-to-ceiling windows overlook an elegantly landscaped garden, offering a slopeside view of majestic Blackcomb Mountain.

Guests of the Mallard Lounge can relax to live entertainment while enjoying a warming cocktail, a bite to eat, or indulging in an extravagant dessert. A Mallard Lounge speciality coffee is a great after-dinner treat.
